If the curse forcibly decreases his lifespan, unless he takes the souls of others to replenish himself and all of the souls are drained from him and put into Sindel, then the next logical conclusion is that he indeed did die.

Unlike someone like, say, Noob Saibot, we saw Shang Tsung disintegrate and die right before out eyes, when all of the souls were put into Sindel.

Like I said, I don't disagree, but we don't know as nothing has been officially confirmed.
But we're just running in circles here. Just don't make your assumptions appear as facts.

it also appears his favorite drink was spirits but had a little to much one night.
Also no endings for individuals are canon to him.
