OMFG! I finally did it!!! Thanks to all the tips here, I finally got it with Sheeva's teleport stomp spam. LOL!

When I finished Shang Tsung, the game paused for a while - I was so afraid that it won't unlock. Then the loading screen appeared and voila, Jade in all her glory.

I finished Jade pretty fast with one Flawless victory too!
