This is something I began working on during E3 as a shot of nostalgia to the days when we did things like this in plain text files for the old MK games in the '90s. For everyone else, it'll hopefully be a convenient quick reference guide to "what's known to date" about the new Mortal Kombat's gameplay features, characters, fatalities, etc.
I've made all efforts to credit the original sources as soon as each piece of information was added but if I left anyone out by mistake, just let me know.

Game Info
=========

The Story
=========
According to co-creator Ed Boon, the story begins as "Raiden is about
to be killed by Shao Kahn, and just before he delivers the last blow,
he sends a mental message to his earlier self, so the camera rewinds
back to Mortal Kombat 1. The Raiden from back then gets a message and
he doesn't know what's going on, but he knows something bad's going to
happen, and the game spans Mortal Kombat 1, 2 and 3, retelling the
story with an enlightened Raiden, and he's changing the course of
things, so everything you've seen happen before – Liu Kang winning
[the tournament in MK1], the guys turning into cybernetic ninjas, are
changed around, so you might see a character become cybernetic who
wasn't before, and so you see a different version [of events]."

The game will also feature the most in-depth story mode in the series
to date which includes a number of fully rendered videos.
The endings, on the other hand, will be a more stylized graphic novel
inspired presentation (they will not be still images like the first three
games but will also not be fully rendered videos like in the story mode;
they will be "something in between" according to Ed Boon as of E3.)
Graphical Features
==================
- PlayStation 3 version features 3-D support
- Runs on a heavily modified version of the Unreal Engine 3 and
achieved a consistent 60 frames per second on the PS3 as of E3
expo version (June 2010)
- Fight damage shows on the characters during a match (broken jaws,
gouged out eyes, lacerations, etc.)
- Darker and more realistic blood that stains clothing and flies through
the air in a curve from attacks that arc
Gameplay Features
=================
- Fast paced, 2-D style gameplay (in 3-D graphics), with custom combos
- Controls:
Front Punch, Back Punch, Front Kick, Back Kick, Block
(Front and Back attack buttons take the place of High and Low in MK1-3;
unlike MK3, there is no Run button.)
- While the majority of the game draws its inspiration more from the first
three MK games, each character has a unique feel and basic move set rather
than generic high kicks, low kicks, sweeps, etc.
- Players earn respect points from spectators of their fights
- There will be around 18 arenas, one (at the very least) is already known to
have a stage-based ("pit") Fatality and there will likely be more
Super Meter
-----------
The super meter (not an official name yet) is a new feature that seems to
encourage fast paced and entertaining fights.
There are 3 levels to the super meter: an "S", Lightning Bolt, and an "X".
- Level 1 (S):
The first level amplifies special moves -- it makes some attacks stronger,
projectiles become larger, or adds a hit to certain special moves.
(ex. Kung Lao's hat toss is vertical instead of horizontal, Reptile's
projectiles are larger, Cage's fireballs are bigger, Sektor's teleport
punch delivers an extra hit.)
- Level 2 (lightning bolt): Combo breaker
- Level 3 (X Ray):
X-Ray mode (may be renamed in the final version.) The camera zooms in
for close-ups to show internal damage from attacks (broken jaws, cracked
ribs, etc.)
- How does it work?
The super meter can be powered up by attacking the opponent with special
moves as well as from receiving damage. This generally prevents matches
from becoming overly one-sided and results in fast-paced and entertaining
fights.
- Tag Team modes
4-player 2-on-2 Versus Mode
2-player co-operative Team Mode (vs CPU opponents)
Characters
==========
The select screen features a 4 x 7 grid. The bottom row has a random
select and a DLC placeholder, so the total number of playable characters
is 26.
Confirmed Roster:
Scorpion, Mileena, Reptile, Sub-Zero
Kung Lao, Johnny Cage, Nightwolf, Sektor
Shang Tsung, Raiden
The first eight confirmed characters were playable and shown in action at
E3 2010; Raiden and Shang Tsung (both also playable) were then revealed
to Arena Turbo. Since the game takes place in the MK1-3 time period, it's
likely that the other characters will also be from the first three games.
Also, it has been confirmed that the Sub-Zero who has been shown in the
trailers and the initial gameplay footage is, according to story, the one from
the original Mortal Kombat (aka. "Classic Sub-Zero" in Ultimate MK3), who
was the older brother of the one who appeared in MKII and later unmasked
in MK3. Whether the younger Sub-Zero (MKII and unmasked in MK3) will
appear at all in the new game is not yet known.
Known Fatalities
================
Scorpion:
1) He draws his spear and uses it to slice the opponent across their
mid-section and then across their neck. He follows up with a kick to
the opponent's torso, sending it flying out from between their severed
head and bottom half. As the opponent's head pops up into the air, he
concludes with a brutal downward sword slash that slices the head in
half.
2) He draws his sword and slices the opponent across the knees. As the
opponent drops to their severed knees, he follows up with... (end of this
unknown as of last update).
Mileena:
1) She stabs her opponent with two sais and slowly approaches the dazed
victim. She then rips her opponent's head off with her bare hands and
proceeds to drink the blood out of the severed head.
Reptile:
1) He holds the opponent's mouth open and spits acid into their mouth.
(End of this fatality unknown as of last update.)
Sub-Zero:
1) He reaches into the opponent's torso and rips out the victim's
spine and skull.
Kung Lao:
1) He tosses his razor-rimmed hat on the floor -- it cuts into the
ground and continues spinning like a table saw; he grabs the opponent
by the ankles and pulls them through the still-spinning hat to slice
them in half.
2) He throws his hat at the opponent and it takes their head clean off.
The hat then returns, boomerang style, and he uses it to slice the
victim's body in half with a swift downward swing. The opponent's body
slowly falls apart as the torso splits open right down the center.
Johnny Cage:
1) He delivers an uppercut that takes the opponent's head off and
then grabs the opponent's headless torso by the sides, pulls upward,
and yanks the torso clean off -- leaving only their bottom half
standing as he slams the top half to the ground.
Nightwolf:
(None confirmed)
Sektor:
1) He fires multiple missles which causes the opponent's body to break
into pieces. He then targets each of the severed body parts and causes
the pieces to explode into a bloody mist.
Raiden:
(None confirmed)
Shang Tsung:
(None confirmed)
Stage-based Fatalities:
1) The Pit (a stage design based on The Pit II from MK2):
The winner uppercuts the opponent and sends them off the edge; the
opponent falls down between tall spiked columns and lands on spikes at
the bottom. The spikes impale their body and skewers their liver and
blood drips to the floor.
2) Living Forrest (remake of MKII stage, but now with a fatality):
Details not yet known.
