I'm a huge fan of the 2D fighters, so for me, that would be Street Fighter, King Of Fighters, Fatal Fury, Capcom vs. SNK 2, Marvel vs. Capcom 2, Killer Instinct, and Guilty Gear X2. I can't seem to get into the 3D fighting games like Tekken, DOA, Virtua Fighter, and so on, though I do play them on occasion.
Same here. I was practically wheened on fighting games of the 2D type. Streetfighter was my mainstay, then others like Kiiller Instinct, Final Bout and many many more. 2D fighters never ever get old, they are and always will be great fun to play.
The entire King of Fighters series (except for 2001)
DOA 4 on Xbox 360
Street Fighter III : New Generation on DC
and last but not least, Samurai Shodown IV : Amakusa's Revenge on Neo Geo.
Well, KOF 2001 is so vague.
It wasn't even developped by the traditional SNK team, but by some Koreans called Eolith.
The backgrounds where bland, the super move system was awkward and the Striker system was more of annoyance than a help IMO.
Thankfully they corrected it with KOF 2002 (The original Neo Geo version, not the PS2 port.)
