You can also slide after an uppercut, so if you connect with a freeze, I wouldn't even bother with a jump kick.
I guess I'll toss in some of the stuff I use:
Scorpion [MK1]: anti-air HP, jump kick, spear, uppercut
Scorpion [MK2]: anti-air HP, teleport punch, spear, uppercut
Kitana [MK2]: fan lift, jump kick, fan throw, square wave punch (pretty obvious, but still)
Human Smoke [UMK3]: anti-air HP, HP, jump kick, teleport punch, spear, HK, D+LP, D+HP, anti-air HP (cancel with RUN), jump kick, air throw (60%+ damage)
