Do you just need the single player trophies to get the platinum or do online ones also count towards it?

Every trophy in the game. All hidden trophies as well as all online trophies. You need them ALL.

Do you have to master Kratos for the My Kung-Fu is Stronger trophy?

It seems that DLC slots are not counted, but I do not know yet.

Yes, in the PS3 version you'll also need to master Kratos for that trophy.
