Stage select

A few days ago I read someone's complaint that you have no reign over what stages you fight on. Of course that's true in arcade, but you can pick the stage you want in both Chess mode and Training mode. I'm sure the same holds true for Versus with a friend. Just press R1 on the character select screen before choosing both of your characters. For X-Box, dunno, but I'm sure they've got something for that platform as well.
 
If you are the one to accept the challenge online, is there any way for you to change the stage?

Someone challenged me the other day and kept choosing the arenas where you could get knocked off the side and die, and was real cheap with Raiden and the teleport then knock off the side. That was all he did. I could never change the stage though, even if I pressed R1.

The same thing happened to me, except I was Scorpion and he just kept tripping me. Anyways, I've also played against people who choose their own stages, but I can't seem to do it. Trust me, I've tried.
