Are you trying to access it before that match begins? You can only select it during the actual fights, it'll be greyed before FIGHT! and after tha last hit of a round.

Th AI is cheap so you have to be cheap. I usually use Kitana, hold Block and start tapping away, when they get in range to do the fan lift, jump kick to fan toss. I'll do that up until Kahn and switch characters to whom ever I want to beat it with.

30th on PSN since it updates on Tuesdays, 31st on Xbox Live since they update XBLA on Wednesdays. It will have a trial/demo on XBLA since MS requires all XBLA games to have a trial, PSN is hit and miss since the publishers have to pay for bandwidth on demos which doesn't always equal a sale.
