That's kind of an open-ended question. As far as playable "gods", I count 3: Raiden, Fujin, and Shinnok who was a fallen Elder God. I can't think of any more than that off the top of my head.
 
There were all the gimps from MKM:SZ, and the 2nd movie had all of the 4 elements, with Shinnock being Earth.

Too damn many would be my answer
